Here's another..
~Stacy's Blueberry Walnut Muffins~
You need: 3/4 C. Atkins flour/Mix, 3/4 C. whole wheat flour, 1/2 C. rolled oates, 1 TBS. baking powder,
1/2 C. splenda, 1 TSP. cinnamon, 1 egg lightly beaten, 1/2 TSP. grated orange peel, 1 C. Sugar Free Tang{liquid}, 1/2 C. applesauce{Lucky leaf/sweetened with splenda}, 1/2 C. blueberries, and 1/2 C. chopped walnuts.
Preheat oven to 375'
Spray muffin pan with cooking spray.
Combine flour, whole wheat flour, oats, baking powder, splenda and cinnamon in a large bowl; mix well.
Make a well in center.
Beat egg, orange peel, Tang, and apple sauce in a small bowl with a spoon until combined.
ADD to flour mixture.
Mix just until moistened.
Fold in blueberries and walnuts.
Fill muffin cups 3/4 full.
Bake until golden..20 minutes or less, as all ovens vary.
Changes:
You can also use 1/2 C. sweetened dried cranberries instead of blueberries.
Can also use toasted almonds instead of walnuts.
For the lucky leaf applesauce w/splenda, I can only find it right now in the pkg. with indiv. serving cups..Haven't found it in jar form yet.
