Two ounces of cream cheese - nuke for 30 seconds to soften. Beat one egg with a packet of splenda. Pour egg into bowl with cream cheese and stir with a fork. Sprinkle with crumbled browned sausage. Cover and nuke for 2 minutes.

When it comes out top with a tablespoon of butter.

Yummmmmm

Cheers

This is what I made 5 mins ago at my office...nuke a large handful of spinach (it shrinks down to nothing) for a minute. Pour one scrambled egg over the cooked spinach and top with 1 oz of cream cheese dotted over the top. Nuke for 1 minute and 10 seconds (your nuker may vary) And YUM! you have a "spinach pie".
Enjoy!

BLBM, do a quick search on breakfasts and you will come up with tons of ideas. I know there are several threads on breakfasts all over this forum. Though induction is the most restrictive, you will still find lots of ideas like the omlette/crepe with splenda and vanilla creamcheese in the middle, or deep dish pizza quiche (who says pizza isn't a breakfast food?) or any yummy cheese and/or veggie quiche for that matter.

BLBM, another staple that I have for breakfast is a salad (usually Romaine). The possibilities are endless for toppings you can use and ways you can make it. I usually go for chopped boiled egg, meat of some sort, perhaps diced avocado, and use mayonnaise as the dressing. Gives you a good head start on getting enough fat in your diet and getting healthy veggies.

How about a mock danish made w/cream cheese, eggs, splenda and flavoring? Check out the Breakfast thread or do a search as there are many variations on this recipe.

Smoked salmon rolled up with cream cheese is another favorite as is hot homemade flaxmeal cereal w/cream and splenda.

I eat my own concoction that's kinda like pizza over spinach:
Chop and fry around 1/2 C any leftover meats, or pepperoni, ham etc. with fresh onion, peppers, tomatoes -whatever I have-add a bit of homemade pizza sauce (to be sure as LC as possible). Add some Mozzarella or Italian blend cheese and let melt. Dump in bowl over fresh spinach and enjoy. The variety sure beats eggs! Salt content may vary-as will water retention, but I don't eat much salt the rest of the day, so it works for me.

hey_Neener, love your signature tag with the pounds to butter conversion. Sometimes I feel like I've eaten that many sticks of butter! How about you?

Thanks! The visual really helps me when I start getting frustrated with myself. I have been on a two week off-plan streak that is stopping TODAY!

1. Make a bowl of salad greens. Put any combination of boiled eggs, grated cheese, canned tuna and last night's entrée diced on top. Pour on about a tablespoon of olive oil, grind black pepper over it.

2. Combine 2 eggs, 1 oz grated cheese, diced leftovers and pepper. Dice veggies and add them too. Mix them up and fry them in butter.

I like making omelets. For the filling, I use whatever I have on hand.....could be green peppers, onion, sharp cheddar cheese, roast beef, ham, fajita chicken....

Try egg drop soup with a slice of low carb toast. It's especially good if you have a cold or flu (cough cough)

I mix 2 ounces of cream cheese with 1 scoop of protein vanilla powder, then add 2 eggs, 2 tsp of Splenda, a shake of cinnamon and sometimes a bit of Vanilla extract. I whip it with a fork, scraping off the cream cheese every once in a while and pour it into a heavily buttered no-stick pan. (Don't worry about the cheese lumps - they melt down beautifully)

It's a bit tricky to flip over...but even if it breaks up...it's all going down the same hole

Sometimes I add a bit more Splenda and cinnamon...and munch away.

Yummmmmmm
