I know I am posting in the wrong topic, but this is so important to me, and Atkins board seems the most lively. My post will probably be moved, but I hope I get an answer to my question soon anyway.

I have invited friends for dinner tomorrow nite & I bought a ROLLED & TIED combination pork/beef roast. I don't have a clue how to cook it. I know I should cook it in the oven..but do I take the string off of it before I cook it? I've searched google & ask jeeves for quite awhile & I can't find any recipe that fits this. I thought when I bought it I could find a recipe or something online to help me fix it..NOT HAPPENING

PLeeease ...help me

Just slop some olive oil over it and put it in a roasting tray. Leave it tied up and roast on about 200 degrees C for one hour and a half or until done. Voila!

I would guess that you should leave it uncovered, but 200 Celsius is about 392 Fahrenheit. If you cook it that high you should make sure it stays moist. Maybe a foil tent for the first half of cooking, then uncover and make sure that the outside is well oiled.

If you have a rack in your roasting tray that will keep the roast above the bottom of the pan you could put some water in the pan. It will help keep the roast moist.

Save me some leftovers!

Joan

We use a cajun spicy seasoning and bbq, it turns out great. So if you have a gas bbq, its deffinatly the way to go!

You'd cook it with indirect heat... turn one burner on, but put it over the UNLIT one to cook... it'll take quite a while, depending on size. I'd highly recommend using a meat thermometer.

The string is MEANT to be there, to hold it together until it's cooked. After cooking, just snip it and remove.

do you have a crock pot? personally, I'd cook it at a lower temp longer, even in the oven. Karen does something overnight.

i alsways wondered, if the string would start a fire...

You put it on the higher rack, and put your bbq on the lowest temperature. Heat bother sides of the bbq so it cooks the whole thing. Cook it for about an hour, it really depends. You want it to reach 170 degrees. Now let the pork sit for about 10 min before cutting into it otherwise it loses its moisture.
