I have one pacific cookbook and love every recipe I have made out of it, it is actually starting to fall apart from years of use, and sadly there are food stains everywhere, a mark of a great cookbook .....I am sooo pleased to find out that you are low carbing it (you look great by the way). My husband and I joined the atkins life a feww eeks ago and the odd cheating now and again are doing great. My trouble is that I love baking and cooking and was starting to despair that those days were off. Now thanks to you I am happy again. I have your list for the low carb kitchen and am off to buy everything. I hate buying prepackaged mixes and such so all those atkins mixes made me shudder. A zillion questions are appearring in my mind but here is just one what are pork rinds??? They sound horriable and where do I get them???? I want to make cookies.....Are they healthy?? Can I feed them to my children (disguised as cookies of course)???

Hi Quincy!

Pork rinds are crunchy fried pig skin and they're quite tasty. They can be found where the potato chips hang out and are made by Old Dutch among others.

Are they healthy for children? Well, yes and no. If your kids aren't low-carb and have insulin issues, the fat they eat will be stored as fat. They contain as much fat as potato chips, no carbs and a little more protein than chips.

They make pretty good natchos and are good with dips, just like chips!

thanks Karen I am off to make your orange spice cookies....I just bought the lc comfort food cookbook and made low carb bread!!! A) feels great to be baking again
B) I missed the smell of yeast on my hands
