Yes, the cauliflower (potato) salad was a big hit around here also! Such a versatile veggie.

Anyone have any recipes using butternut squash?????

oooh I wish I could eat a butternut squash those are pretty carby!

I love cauliflower..havent mashed it yet though keep wanting to....I cannot convince Husband to try it though

Just make it one day. Put it in front of him, I'm sure he'll try a bite of it (and then proceed to scarf the whole bowl!) When I told DH about it he was like -- ehhhhhh, I don't know . . . . I made it anyway and now it's one of his favorites. When he goes to the store he always buys cauliflower, making sure we always have some on hand so I can whip some up if we suddenly feel the urge.

Cauliflower mashed potatoes - great - what if you put a couple of eggs in it and made it more firm - something like a quiche?

Oh good grief! After reading all these posts I had to try mashed cauliflower (with butter & cream and a pinch of cheese) with my dinner and I'm hooked!!!

The perfect replacement for my much-missed mashed potatoes - now to practice the willpower and not go finish the entire batch!!

Default butternut squash suggestion

I just cut up the squash (or half of one or whatever, it keeps well in the fridge if you wrap it) into roughly 1 inch cubes and peel them. Then I steam until tender (doesn't take very long) and then put in a heatproof bowl with butter and parmesan cheese on top and put under the grill until hot and bubbly. A bit of freshly ground black pepper is a good addition. I know butternut squash is higher in carbs than other ones, but it makes a tasty treat and can't be too naughty....

Thanks for all the fantastic cauliflower recipes. I did something similar by mashing and adding cheese, but I think I'll be able to improve on it now. Yes, my husband was suspicious (took about one teaspoonful to start with) but pronounced it 'very good' and took loads more.

Followup question - I WAY Overate the mashed cauliflower! Sweet mother of god, that was worth every freakin gram of carb!

So I put it in fitday (2 cups) and it says 10 Grams of carbs.

But just above someone said 2 cups had 5 NET grams.

Is there a secret calculation I dont know about?

Why does fitday say 10?

Passiflora, I bought butternut and acorn squash this weekend at the grocery because I thought they were probably low in carbs too! I came home and checked my carb counter and this is the report:

Acorn (baked) 1/2 cup = 21.8 carbs
Butternut (mashed) 1 cup = 25.5 carbs

Needless to say, the neighbors are now feasting on them. They get alot of our rejects recently! I was so disappointed! I really had my taste buds ready!!

BelmontLil, 2 cups have a total of 10 grams of carbs, but of those 10 grams, 5 are coming from fiber. Since the body can't digest fiber, you subtract the fiber from the total to get your net count.

I'd say for 2 cups and only 5 carbs, the cauliflower is just a fabulous veggie

Wooo hooooo! so maybe I didnt go over that badly yesterday! AWESOME. So the carb counter on fitday doesnt take that into account... it must be listed somewhere, right?
