Lightbulb Faux-Tatoes

I just want to thank... whomever it was that posted the Califlower Mashed Potatoes... I made them last night.. granted after craving mashed potatoes for days...

Not too hopeful about whether they would be good...

But.. to my suprise..
THEY WERE AWESOME

Totally took away my craving..

So a big THANK YOU!!! to you for bringing this new Staple Food into my life...

Great! How'd you make them...just mash them with some butter and salt and pepper? I have some cauliflower in the fridge I need to use up, and I've heard these are delish.

actually i used a food processor..

I steamed 1 large head ( cut into flowerettes) til almost tender... and threw them in the food processor till purreed...
then added 1/2 cup cheddar cheese shredded..
4 T. sourcream
1 tsp. salt and cumin.. instead of pepper
1/4 cup parmesan cheese
~~~~~

Purree'd them all til smooth..
then melted some butter on top...

OMG totally delish... and worth the effort.

I totally recommend!!!
My boyfriend even loved them... and he is a potatoe freak

I have done this also but I was too slack to put them in the food processor

I suggest you do that a normal masher does not work well on faux taters!

I find that white chedda is bedda!

personal preference!

I made mine with just cauliflower, cream, butter, salt, pepper and a touch of cayenne. They were great, but the idea of adding cheese sounds even better! Oh, and here's an idea, how about a tad of garlic powder? It's almost lunch time...guess what I've just decided to have.
