Talking First Week LC in California

First week of lc has been difficult for me. I think it is the mind set regarding all the "fat" that we can eat. All my life I have tried to stay away from lots of meats, butters, creams etc. and my mind hasnt done the change over yet, even after reading Atkins Book. I am determined to stay on it no matter what. Have been reading all your questions and responses, they are encouraging. I am a Medical Provider and know that the results I will have, not only weight loss, but blood sugar down, and high blood pressure will be a example to others to try the lc way of life.
Since I am in the office all day and eat here, lunches and snacks are a problem. Eating lots of fats during the day is very hard for me to do. I feel really sluggish and tired. So anyone out there that stays in the office all day, and doesnt have alot of time to eat, let me know what you are doing. Quick meals, and snacks. Dinner has been no problem.

What about taking salads for lunch? I'm a stay at home mom, but there are times when I have to pack a picnic lunch in the morning. Often times I will put salad in one container, dressing in another, and cut up chicken in another. I know, lots of containers. But it works. Then I mix it all together right before I eat it. Hard boiled eggs and sliced cheese work well, especially as a snack.
It took me awhile to get over the "fat is bad" mindset, but given time you will get there.

Hello Mysty.....Welcome to the forum. Me too, a stay at home mom...but how about the sandwich with out the bread. Tuna salad, chicken salad, roast beef and cheese.

or lettuce leaf roll ups - that's what I take to school lunchtimes... 2 more weeks of summer break...

Once you're off induction, you can have wraps using La Tortilla brand tortillas. I think they're 3 net carbs each. I use those a lot.
