Fried chicken is easy. Just get some atkin's bake mix or some plain soy flour. I prefer the bake mix, but at 12 bucks it is expensive. I use breast filets, but any piece will do. Season with salt and pepper or whatever and then dip in egg, then roll in bake mix. Fry. Easy. Good.

Deep-fat frying will structurally change all unsaturated fats (like those in chicken skin) from the healthy cis- configuration to the dreaded trans- configuration. It's the extreme heat and oxygen, inherent to deep-fat frying, that damages the fats.

OH NO! And all this time I thought all the fat was GOOD! Darn. I don't know if I can give it up, it's one of my favorites. Maybe limit it to an every once and a while treat. Man, how come everything good has a hidden black cloud hanging over it?!

Default It can't be that bad

I have had many, many meals out of "deep fried" chicken cooked in the frier and a little less than 2 months on the diet and I am down 35 pounds, so it can't be just to bad now, huh?

If anyone needs any convincing that "home-cooked" is better for you in every way (except convenience), take a minute to check KFC's nutritional disclosures:

Should work for shrimp and scallops, too. Think I'm gonna dig out my old "Fry-Baby"!
