Default Zucchini? Tried the low carb receipes .....

Oh my gosh, I looked at one receipe for zucchini and it had 16g of carbs!!!
I have some zucc's that I'd like to cook up quickly and easily - suggestions?

I asked the same question!!! The replies for me are (right now 10:12 pm 7/28/03) on page 8 of these treads.

I fry them up in a little butter (oil is too greasy for me) and dip them in a little ranch dressing as a treat!

Think I'll try it. I was using some bacon grease - after all I eat bacon a lot more now! - but I'd get the zucc too soft and mushy.
I'll have to figure out how to find the thread you mentioned - thanks!

Wash one (or more) small zuccini/courgettes well, and then use a mandoline or a vegetable peeler to slice. You should have a pile of very thin 'zuccini shavings'. Steam these for ~ 2 minutes. Meanwhile dice 3 or 4 cloves of garlic, slice ~ 3 mushrooms per zuke. Quickly saute' the garlic & mushrooms in 1-2 Tbsp. olive oil, add the steamed zuccini & a pinch of 'italian seasoning'.
