Prawn (Shrimp?) Roll
Made this for DH to take into work this morning. He was lucky I did not eat the lot!! Was awsome.
8 oz cooked prawns, peeled and deveined
2 tbs Mayo
Several drops hot pepper sauce
Salt & Ground black pepper
8 fl oz egg substitute (I used 4 eggs)
Olive Oil spray
Coarsely chop the prawns. Add mayo and hot pepper sauce and salt & pepper to taste. Mix egg substitute (or 4 eggs!). Heat medium-sized non-stock frying pan on medium-high heat. Spray with olive oil and pour in the egg substitute (or eggs). Spread to make a thin layer. Leave to cook for 2 minutes. Turn over for 1 minute. Remove from heat. Spread the prawn mixture on top. Roll up & enjoy!!
