Default Cornstarch

I'm pumped with the Atkins way and I have my spouse on it too. He seems to be a bit bored with the meal selections whereas I'm delighted with meat of any kind..but bless him for hanging in there with me. So as a special treat for him I want to start making some desserts.. I found an absolute delicious sounding Lemon souffle.. but it takes cornstarch and lemon juice but I don't see any of the LC recipes that use cornstarch.. is it off limits? And not to change the subject but what about soy sauce? And sugar free Jell-O I see that has aspartame rather than splenda? Are there any products that I should be looking for that are better?
