Truffles -- too good to be true!
Made these tonight for my birthday. Forgive me if there's already a recipe like this floating around out there.
So easy...
1/2 cup peanut butter (creamy or crunchy)
6 oz (1/2 bag) Russell Stover SF chocolate chips
1/2 cup heavy cream
coconut, crushed hazelnuts, cocoa powder, etc.
Melt the chips in a medium bowl in the microwave -- this took about 2 minutes for me and I stirred after about the 1st minute.
Mix p.butter into the melted chocolate.
Mix cream into the chocolate mixture.
Add any other stuff you want...I mixed in about 1/2 cup of SF coconut.
Pop it in the fridge for 30 minutes or more.
Scoop the mixture into balls (I did this by hand, but a melon baller would probably be a great help and not quite so messy) about the size of a teaspoon. Roll in the coating of your choice. (I used crushed hazelnuts for some and coconut for others). Eat and enjoy!
I don't have a count for this because it really depends on how many you roll up and what you coat them with. Mine were pretty large and I got about 22 out of the recipe. Gonna find out how they freeze because I sure don't want to eat all of them in the next day or two.
