Default Curried Cauliflower (If you like Aloo Gobi, give this a try.)

I made some Aloo Gobi (curried potatoes and cauliflower) last night. Of course, the potatoes were for the non-LCer. It was fantastic! It tasted almost as good as what we get at the Indian restaurant down the street!

Here's the recipe, minus the naughty 'taters.

1 small head cauliflower
3 Tbsp ghee (clarified butter), or other cooking oil
1/4 cup chopped onion
1 clove garlic, minced
1 1-inch piece of fresh ginger, minced
approx 2 Tbsp curry powder, or to taste
1/3 can (6 oz) tomato paste

- Steam cauliflower.
- While cauli is cooking, heat ghee in a large pan.
- Add onions, then garlic, ginger, and curry powder. Stir.
- Add tomato paste.
- By now, cauliflower should be cooked. Add a splash of the cooking water just to blend the ingredients.
- Add cauliflower, stir gently to coat. It should have a fairly dry consistancy.

This is easily made into a full meal by adding tofu or chicken.

For the entire recipe (should serve 2-3 as a side dish)
Calories: 511
Fat: 41
Carbs: 37 g - 14 g fiber = 23 g
Protein: 10 g
