Spinach

Just bought an ENORMOUS bag of spinach (couldn't resist - it was a great deal and it looked sooo fresh). Am I right in thinking that this is one of the veggies I can have more often than others?

Last night, I sauteed it in butter and garlic

, but I'm going to have to get pretty creative this week - I have tons to use up!
