Default Question about soy flour....

I was wondering if anyone had any idea if soy flour can be used on Atkins?? I don't have my older DANDR book, but I am pretty sure that in some of the recipes, doesn't he state that you can sub. in soy flour???? Help...I just bought some today at a local farmers market and don't want to use it until I definately find out! Thanks

Yes, it's fine to use. Oddly, low-fat soya flour is lower in carbs than the high fat type.

You can't use it cup for cup as a substitute for wheat flour though. It requires some fiddling and using other low-carb baking ingredients in conjunction with it to make it work.
