the only place I know of is my local health food store with a meat counter. They offer free-range animal meats of all sorts and sugar- and nitrate-free jerky, bacon, and sausage. It's a subsidiary of Wild Oats. I'm sure other HFSs have it, as well, depending on your locale.
but boy, do you pay for it!
Sometimes I get lazy and just buy the one sugar-free brand my store has, realizing the other chemicals additives can't be good for me, but also realizing I eat very little of it.
Making your own (processing a pork belly) is really hard work. Jerky, at least, you can make on your own.
also check out the recipes for home-made sausage on line. ( http://www.panix.com/~paleodiet/list/sausage.htm ) is one location. If you just make patties (rather than extrude them into casings), it's a snap. You can make a big batch, put them in the freezer between layers of waxed paper, and pop one out any morning.
