Cut all the vegetables in even pieces, about 3-inches long and 1-inch thick. Only add enough oil/fat to coat them - say 1 Tbsp. Use a heavy baking pan - a cast iron frying pan is good - and spread them out so there is at least 1-inch of space between them. Bake at 250 C (500 F) for 10 minutes then turn the heat down to 175 C (350 F) and continue baking for 20-30 minutes. Turn over half way through and sprinkle with salt, pepper and herbs if you like when done.
The keys to success are - using the minimum amount of oil, a heavy pan and keeping the vegeables well spaced so they roast rather than steam.
