Talking Leftover Mashed Faux-tatoes Breakfast Cake/Patty Things

Sick of eggs? Got some leftover mashed faux-tatoes in the fridge? Fry them up for breakfast in this tasty fried cake-patty-type-thing.

1/2 cup leftover mashed faux-tatoes (one serving)
1 egg
1 oz cheddar cheese, grated
1 tsp finely chopped onion

- Beat egg, combine with other ingredients
- Fry in butter. They will be pretty delicate, so give them a good browning on each side.

Here are the numbers for the entire recipe. I only ate half, with some sausage on the side. It's pretty filling. Note that I used my cauliflower/squash recipe for faux-tatoes. If you used plain cauliflower, the carbs will be lower.

This doesn't include the butter used for frying.

Here are a couple of other fried veggie patty recipes:

Veggie Pancakes

It's a nice break from eggs and bacon, and a good way to get some more vegetables.
