Hi there......
I have a copy of the book you are referring to, and though I'm not following PP, I do have an opinion about this, after reading through and trying to find their answer.
I noticed that generally, when it says unlimited, you'd be eating a huge quantity of food to get to that. For example, 5 cups of boiled chopped broccoli = 20 grams ECC. To get 25 grams ECC, they list "unlimited" as the quantity. Could anybody really eat more than 5 cups of boiled chopped broccoli PLUS all of the protein they'd be required to have if following PP recommendations??
So, I suspect that it's either an error or the Eades don't think anyone is going to be able to eat enough of the veggie that's rated unlimited to cause concern about the carb count.
