Simple Chicken Recipe
2 chicken breasts, skinless and boneless
2-4 slices of parma/serrano ham
2 large teaspoons of mild goats cheese (like cream cheese)
2 marinated sun-dried tomatoes
Olive oil
Salt & Pepper
Pre-heat the oven to 200C/400F gas mark 6. Using a sharp knife, make a pocket in the side of each chicken breast. Stuff the pocket with the goats cheese and the sun-dried tomato. Use the ham to wrap each chicken breast (attempting to seal in the goats cheese and tomato). Place the wrapped chicken breasts on a baking sheet, drizzle with olive oil and season with salt and pepper. Bake in the oven for about 25 minutes.
