Default Pudding Pops

Remember when you were younger and Bill Cosby would be on the commercials for Jello Pudding Pops, I found this recipe on the Weight Watchers website. Do you think these could be converted to low carb? I would appreciate any ideas.

1 package chocolate pudding and pie filling mix, 3 1/8 oz (get the sugar free)
1 1/2 cup 1% low-fat milk
1 Tbsp unpacked brown sugar, packed (brown sugar twin?)
1/8 tsp table salt

In saucepan, stir together pudding mix, milk, sugar and salt until smooth. Cook over medium heat, stirring constantly, until mixture comes to a boil. Cool 5 minutes, stirring twice. Pour into 4 popsicle molds and cool 15 minutes. Insert popsicle sticks and freeze until hard.


Remove pops from molds. Serve or wrap in plastic and store in freezer.

Could try sf pudding
heavy cream
splenda
and see how that works.
