Hello Canadians:

We've been gradually improving Ferrando Bread and Baking Mix.

The bread is now down to 1.5 effective carbs per 28 g slice. That's down from 1.8 g per 25 g slice.

We start using the new labels for the bread next week, but the lower carb count has been in place for a while now.

The baking mix is equally reduced, but it will take a while to burn off the old labels.

We are now bench testing a new Low Low Carb pancake mix. It will have all ingredients in the mix, including MCT Oil, Egg White and pure sucralose (no maltodextrine. Just add water, stir and fry.

The recipe is still being fine tuned but the current specs are for 28 g of dry mix or 73 g. prepared (just water added):

Protein 9.2
Fat (MCT's mostly) 3.1
Carbs 5.7
Fibre 3.7

Effective carbs 2 g

By the way, we have a tougher time here in Canada producing Low Carb Products. According to the Canadian Food Inspection Agency, Low carb products must be 2 grams or less of carbs per serving and less than 10% total. That's a tough standard. It's why we often lose products that can be sold elsewhere.

Lowcarbcanada sell baking mix over the net. We have not figured out a way to send fresh bread yet. If you contact me through the web site I'll try to arrange to have University Bakery (who bakes it) sell to you direct.

Retailers set their own prices but Ferrando products are at the high end of the scale. When you read the ingredients you will know why.

Ferrando products are quite pricey. People expect bread to be cheap. That's a challenge when you make a "sow's ear" out of a "silk purse."

The flour and water to that go into bread might work out to $0.50 to $0.75 per pound, and it fluffs up to a nice big loaf.

Just a few of the main ingredients in Ferrando Bread include:

Supergluten 80 about $3.00/lb retail
Oat Fibre (not bran) $2.53/lb (from the manufacturer) product is not available on the retail market, but would be about $4.00/lb retail
Supro 660 Soy Protein $9.20/lb retail
Defatted Organic Flax (Omega Nutra Flax) 12.00/lb retail
Whey Protein Isolate (92% Protein) $26.50/lb retail
Inulin (FOS) used instead of Sugar 14.35/lb retail

The side benefit is that you get quality protein and nutrition, and the fibre means that really need to eat very little to feel really full and satisfied.

LowCarbCanada (that's me ) website is in my signature...and we both have the little website icon activated in that bar that runs under everybody's posts...
