I love roasted garlic too and it should be just fine. This is a quote from the atkin's page:
Whether raw or cooked, one garlic clove provides 1 gram of Net Carbs, 4 calories, 1 gram of total carbohydrate and no protein or fat. 1 g/clove... and yes it sooo good spread on top of a steak.
