Substracting fiber from the carb count is something that originated with the Eades in Protein Power. The reasoning is that while fiber is a carb it is not digestible by the body and causes no change in insulin. Using the ECC (effective Carbhodyrate Count) of a food is something that other plans have adopted. I have not read the new Atkin's book, but I do know that he addressed the issue in the previous edition. Subtracting the fiber allows you to eat more carbs and to have a more varied and interesting daily diet thus making the likelihood of becoming bored less. Less boredom equals less of a chance you'll stray or be tempted by non LC foods.
