Lightbulb Ham and Spinach Bake

I just found this in the 'Food' section of my local paper today:

"This can be done with surplus Easter ham"

2(10 ounce) packages frozen chopped spinach, defrosted and squeezed dry

24 oz small curd, cream-style cottage cheese

8 oz sharp cheddar cheese, cut into 1/4 inch cubes

1 stick (1/2 cup) butter or margarine, cut into 1/4 inch cubes

2 tablespoons all-purpose flour

2 cups chopped baked ham

6 large eggs, beaten


Preheat oven to 350 degrees. Grease a 13 by 9 inch baking dish. In a large bowl, combine all ingredients well. Transfer to prepared baking dish, spreading evenly. Bake in center of oven about 30 minutes, or until middle is firm. Makes 8 servings.

Per serving:
**458 calories
**64% calories from fat
**34 grams of protein
**8 grams of carbs
**2 grams of fiber
**32 grams of fat
**233 milligrams of cholesterol
**774 milligrams of sodium

Mind you, I have not tried this yet, but I plan to soon.

Thumbs up Great recipe

I tried this bake last night. I cut it in half sort of..used 16 oz. cottage cheese and 1-3/4 cups ham, everything else in 1/2. It is a very tasty bake. BTW I also sprinkled it with Cavenders greek seasoning and fresh ground pepper.
