Default Jumping Jimca------------!!!!!

Since I am so tired of GREEN VEGATABLES - I poked around a pit and found the thread about Jicma.

Went to the store and purchased this spaceship shaped thing and H raised an eyebrow and D said "no way" was she going to eat THAT!! If I was working out, it could be a 5lb weight!!

Sliced it thin and put some on the plate and then cooked a few slices in butter w/seasonings and to tell you the truth.....
it's awful!!!!!!!!!!!

When I entered it into Fitday, it came up high for carbs too.

What did I do wrong???????

Jicama is supposed to be eaten raw, especially popular in salads. I stand corrected: on allrecipes.com there is a listing for jicama pie!

...The cooked, sherry-infused jicama adds a delicious crunch to this pie. The cooked root vegetable mix is first folded into a yummy custard filling and then it 's poured into a pre-baked pastry shell. Cinnamon, butter and sugar are sprinkled over the top and the pie is slipped under the broiler to bake until bubbly and brown...

You get the idea.

I have had it several times, but always raw. It is great very finely shredded and used with salads or as a garnish.

I've only eaten jicama raw as well. Tastes a bit like apple. If you want something more potato-like try daikon.

Well, I'm here to say, I love it sauted, in butter, but mostly I eat it raw, as a snack at work. I give slices to others at work, and they think it's bland But, like I say to them, if you have'nt had sugar for almost four months, it would taste pretty sweet to you too

It is supposed to have a high fiber content so the ecc is lower then what fitday lists.

Its a treat in SOuth America served with lime juice.

I take raw jicama, peel and slice.
Sprinke lime juice, a little salt and little chili powder.
Yum! Very crispy and fresh tasting!

Oh and of course, a nice big bottle of water too.
