I've made these often, using red radishes, daikon (oriental white radish), turnips (the small white and purple variety), and even zucchini. All good. In the linked thread, there's a suggestion from r.mines to add a small handful of crushed pork rinds near the end of cooking, which gives a nice crispy crunchy "je ne sais quoi" that's so yummy
