Default Cornstarch

I'm pumped with the Atkins way and I have my spouse on it too. He seems to be a bit bored with the meal selections whereas I'm delighted with meat of any kind..but bless him for hanging in there with me. So as a special treat for him I want to start making some desserts.. I found an absolute delicious sounding Lemon souffle.. but it takes cornstarch and lemon juice but I don't see any of the LC recipes that use cornstarch.. is it off limits? And not to change the subject but what about soy sauce? And sugar free Jell-O I see that has aspartame rather than splenda? Are there any products that I should be looking for that are better?

Hi there!

Cornstarch is generally a no-no. If you look around the 'sweet treats' section of the forum, I'm sure you'll find something similar but LC. I seem to remember a lemon curd recipe, and a lemon custard of some kind.

Soy sauce is okay as long as it's sugar and starch free.

Aspartame is probably okay in moderation... I eat a lot of it. Probably too much. It's a YMMV thing. I rarely see products with Splenda. I hope its popularity keeps growing.

Something that you can use in place of cornstarch that adds no carbs or flavor is guar gum. Most health food stores carry it and it will thicken pretty much like cornstarch in either hot or cold liquids. Also adds a lot of fiber without seeming like fiber.

Default soy sauce replacement

Something you can use in place of soy sauce is
Bragg Liquid Aminos (all purpose seasoning from soy protein)

It comes in a spray bottle. I get it from my local health food store, but I think I have seen it at my local grocer as well.
It has 100mg of carbs per 1/2 tsp.
It is very salty, so you only need about 2 sprays on your meat or veggies.

It's not fermented, so there is no alcohol (I think that means there is no MSG either)
It's wheat free.
It contains 16 amino acids.
It's sugar free.

Default Arrowroot?

Is Arrowroot powder an acceptable substitute for corn starch?
I know they use an awful lot of it in the paleo world.

sugar free Juicy Gels use Splenda, so there's that. I used cornstarch once (it's very low carb and a lot better than flour for thickening). I don't know why you couldn't use it in moderation if you count the carbs (you're not on Induction are you?? if you are, then scratch that!!). Low sodium soya sauce is okay, but count carbs, of course!
