I don't know if there is really anything russian about this salad but that was the name of the recipe.
Anyways, todays craving has led me back to this recipe which I have made forever and its so delicious. Too bad I can't still eat it on my triscuts!
Russian egg salad
2 hard cooked eggs, grated
2 tsp grated onion
1/4 cup chopped green olives
1/2 of a small green pepper, chopped finely
1 tsp worchestershire sauce (or what you would normally use in place of it)
1 TBLS mayo
3 oz cream cheese, softened
Mix together well. Refrigerate a couple hours before serving so the cream cheese has time to set back up.
Thats it easy as can be! I usually make a double batch myself cause it's so good. Enjoy!
