Congrats on finishing your 2 weeks! I just finished mine also! =) I think the reason the book suggests you advance slowly upon the higher carb limit and the types of foods is so that you can identify problems easier. If you were to add several new foods and stopped loosing, you wouldn't know which one was causing it. So, by adding 1 at a time you can identify if you have a problem with a particular food. Also, the 5 carbs a week add also helps you identify your critical carb level for loosing.
