Madmike, you are doing well with this WOE. I think the mental exhaustion is a bigger problem than boredom with food. You obviously know what is low carb food (your success shows that) just keep good supplies on hand so it's easy. Try to find a treat or two that you can keep on hand. Do you have any hobbies or interests you can develop? Is it time to start something completely new?
