buttermilk

Can someone in the know say something about buttermilk please.

I know we are not supposed to have milk but I have just read that fermented milk products like yoghurt and buttmilk , one should not read the carb counts on the label.

Is this true and if not , then how many carbs in a cup of buttermilk ?

Hi Rob!

Buttermilk has on the average 12 grams of carb per cup, so would probably not be very doable for someone on induction. Perhaps in pre-maintainance or maintainance and regardless of whether a product is fermented or not, the carbs count.

Hmmmm! What I would want to say about buttermilk, is probably something I shouldn't.

Are their buttermilk solids that are low carb and which could still give flavoring to foods, such as pancake mix or salad dressing? I shudder to think of actually drinking it, but I hear many people do. Personally, I place it in the same category as liver and parsnip porridge. :D

My thoughts on fermented dairy products...

Hi Rob!

Your link didn't work, but I went to the site and read the article on my own. I'm a bit skeptical, but I'd say give it a try and see how your body reacts to it. I would caution against using the artificially sweetened kinds during induction (remember, Atkins limits artificial sweeteners to 3 packets a day on induction). Unsweetened yogurt may have only 4 grams per cup (if the lab results are accurate), but how do you determine how many grams are per cup or container once artificial sweeteners are added? What about the varieties that are sugar free but add fruit? It can become a tricky proposition to determine exactly how many carbs you are eating when you ignore the label and try to figure it out for yourself.

giving it a go

Hi Lisa,
