just happened to turn the tv and the food nerwork and this lovely southern lady was making squash casserole
completely low carb!

Squash Casserole

zucchini or yellow squash or both mixed about 6 cups raw,chopped
chopped onoin
salt,garlic, pepper
cup of more of sour cream
looked like about 1 1/2 c of cheddar cheese
butter

steam (or saute) the squash til tender then drain all wayer our (use a chees loth or linen dishtowel over a collander)
saute chopped onoins in a bit of butter til transparent ( I think I will do mine til they are golden cause I like the carmelized taste)
Mix together in a casserole dish
add sour cream and shredded cheddar cheese
add salt, petter, garlic to taste
stir atound
Top with more shredded (like Monterey Jack and Cheddar mixed would be nice or I am going to use some slivered almonds as well for crunch, cause she used crushed up crackers) or just bake as is
Bake and I didn't catch the oven temp but my guess is 350
til golden on the top
I looked yummy and a like a great mac and cheese sub!

so since my zucchini won't be in for quite some time I am adding to my grocery list today!
