I have this book even though I don't follow the Zone diet. I agree the use of fructose is not appropriate according to the Eades research (although considered low glycemic). I just eliminate the fructose (or one could use stevia or <<sigh>> artificial sweetener). The low fat stuff I substitute with the high fat stuff. However, I mostly used her recipes for the smoked condiments.
I must say that this cookbook has transformed my cooking. Mainly due to the stovetop smoker. I love it! I've smoked onions, garlic, leeks, fish, chicken, steak, pork. Everything has turned out wonderful. I don't know what I'd do without it now.
I would recommend investing in this smoker for ANYONE doing low carb, especially ex-vegetarians (like myself) who don't necessarily enjoy the taste of meat.
