Default question re: tuna mousse and eggplant

Hi Karen,

This recipe looks fantastic for the tuna/eggplant mousse. How many servings does the recipe yeild? I coulnd't seem to find the serving size (but I'm probably not looking in the right place).

Thanks for your help,
Athena

Hi Athena31!

It's easy to miss:

Slice the eggplant in 12 1-inch slices on a slight diagonal.
So it makes 24 pieces. Get the skinniest eggplant you can find.

BTW, my middle name is Athena.

Thank you, Karen (from one Athena to another)! I knew I must have missed it somewhere. By the way, we're in Seattle and my husband recommended we take another trip up north sometime and visit your restaurant for dinner. I think I had read in another post that you offer a very lovely low-carb menu, true? It would be so nice to go out to a great meal without carbing up or only being able to choose steak and caesar salad!

Thanks again, I may have to ask you for future advice revamping this fantastic full-carb recipe for eggplant parmesan that someone gave me at the Italia-fest a few years ago. I've had a real hankering for eggplant lately-

Athena

Not quite true but the menu is very easy for low-carbers to negotiate and we always have a LC dessert on the menu.

Every six weeks or so we do a full on four course dinner paired with wine for $60.00 inclusive. The next one is this Thursday and it's featuring local products. The menu is here if you want to take a peek.
