ooh, that sounds good- i have done various hot "cereals" using flax or coconut flour with almond milk or cashew milk- but love the addition of chia, and haven't tried doing both together. great idea! I think i might try it adding some cocoa, as well- as a kid, my favorite breakfast was oatmeal with the squeeze tube of chocolate (that was pre diabetes!).
I think i will throw cinnamon pumpkin seedz on top as well, for the crunch.
