Default Low Carb rice Substitute?

I had rice last night, because it was there and I just couldn't think of anything else that would complement my corned beef.

Any low carb rice substitute suggestions?

I have read a thread in the main dishes forum that tells you how to make a rice substitute from cauliflower....haven't tried it yet though.

How about having cabbage insted of rice? Corned beef and cabbage YUM-YUM!!!

Grated cauliflower lightly boiled will make a rice substitute. Chopped up hard boiled eggs are also good for putting stuff on.

P.S. Boiled cauliflower can be mashed to give something like mashed potatoes.

I use spaghetti squash as a noodle substitute, but if you chopped it up it would also probably work fine as rice. It doesn't have much flavor, so basically it just adds texture to whatever you are eating.

Just put the spaghetti squash in the oven and bake it for a long time until it is soft. Scoop out the insides and you are ready to go.

If you look at the Low Carb Recipes on the orange bar at the top of your screen, Karen has a recipe for "Cauliflied Rice" that is a great substitute for fried rice.

Using that idea, I often just stir fry plain grated cauliflower as a base for "saucy" dishes. Works well!
