Well, I guess the term 'better late than never' would apply here? *lol* I just stumbled across your post, after doing some last-minute research to look for recipes for the holidays, and since we have a tradition for making coconut-cookies here in Norway I was glad to find a 'normal' recipie that looks easily convertible to lo-carb. I've not tried it yet, mind, but it should work beautifully!
Coconut-cookies
3.5 ounces unsweetened, shredded coconut (20 g. carbs)
0.6 cups of Splenda (15 g. carbs)
A dash of vanilla essence (0.0 g. carbs)
2 egg whites (0.6 g. carbs)
1 tbs butter (0.0 g. carbs)
The total recipe is 35.6 g. carbs, which makes approx. 25 cookies ~ 1.4 g. carbs each.
Put everything in a casserole and heat over slow flame while stirring constantly until the butter is melted and you have sort of a sticky dough. Place dough by the spoonful on a cookie sheet and place the baking tray in a cold oven. Set the temperature to 482 degrees F. and watch the cookies carefully. When they are lightly golden they're done. Cool on a wire rack and store in tin foil in the fridge to keep them crisp.
They should be yummy with a tbs of cocoa-powder too!
Note: The carb-count for the coconut is according to the brand I get in my store, you might have to adjust according to your brand!!
