Wink shopping: nuts for eggs

I was so excited that I've been able to stick with this and lose weight, that I went out LC shopping and I found some good deals:

EGGS

I found eggs on sale 5 dozen for $2.99US. Around here I usually spend $1 to $1.30 per dozen. What a bargain!!! I'm wondering if I should get back there before the sale ends and pick up another. I'm eating tons of eggs, gone through about 2 dozen this week anyway (mostly breakfast). Inexpensive protein, no carbs!

eggies--eggies---eggies---eggies--eggies

How many different ways can I eat eggies: scramble them, fry them, bake them, boil them, eggie salad, deviled eggies, eggies in the tuna salad, eggies w/steak, eggie crepes, eggies baked into breakfast bars, eggie quiche, eggie sauces, eggies as thickeners--Ooooh, maybe I will pick up another 5 dozen before sale ends.

NUTS

I also noticed that the nuts were out--you know the ones in the shell. The people in the store looked at me weird when I danced around saying "Oh goodie, the nuts are out to play". The store manager laughed when I told him this followed by "When the nuts come out to play, then I'm not so lonely". I love it when the nuts are in season--I love to buy them in the shell and crack them open and YUMMY

I foresee in the near future: Cheesecake w/almond meal crust


I wonder if I can do anything w/eggies and nuts.......nothing is coming to mind, but if anyone knows--tell me soon

My refrigerator and freezer are full of meat and eggs and my cupboards are full of nuts. I even stopped by health food store and picked up flax seeds and guar gum to try out some recipes I've found here.

I'm sure that its not professional, but all I do is grind (my food processor does this fine) some almonds to a meal-like consistency (before they turn into an almond butter) then I spread this on the bottom of the pie pan before I fill it w/cheesecake filling. They stick really well to the cheesecake--probably because of the oil from the almonds. I have been known to mix some cinnamon or cocoa powder into the nut meal before putting it in the pan. Then I just make my cheesecake (cheesecake made w/AS of course)

I'm planning to experiment more with nut meals and flours since I'm making this a WOL. The main diff is that meals still have the oils from the nuts included and nut flours are made from what is left after oil is extracted from the nut. I have no idea how you'd make nut flours at home, but I've found a couple places on the Web you can buy them--I haven't bought any yet. Before, when I did this WOE, I pretty much made due w/what I could make or think up (except AS and Low Carb Bars). But this forum has given me tons of ideas and new ingredients to play with
