Thumbs up Try this flax cereal

Hi,

I was looking for an alternative to mock danish for my 1st breakfast after BFL workout. - I use the gym in my office building, so it needs to be portable and fast, no cooking required, no small appliances like a blender.

I saw this post by Nellie in Low Carb Kitchen:

Flax hot cereal recipe
I found this at "Low Carb Luxury
I thought it was great!

http://www.lowcarbluxury.com/lowcarb-breads.html

Cinnamon Hot Cereal

3 Tablespoons Flax Meal
3 Tablespoons Vanilla Protein Powder
2/3 cup Water
dash Salt
1 Tablespoon Butter
1 teaspoon Cinnamon
Artificial Sweetener (Splenda) to taste
1/4 cup Heavy Cream -- well chilled

Mix first 4 ingredients until smooth. Microwave approximately 2 minutes. Top with butter, Sweetener, cinnamon and cream.

Makes 1 serving. 2 carbs per serving if using liquid sweetener (I do.) Adjust as necessary if you use a different sweetener.

I trialed this tonight, and it was yummy. I tweaked it a little,
using 4 tbsp (1/4 cup) of vanilla protein powder & 1/4 cup flax seed (ground it myself in coffee mill). All other quantities the same. 10 Drops of my liquid Stevia worked really well.

Using my protein powder (work it out for your pp + AS) the fitday numbers are:
Total: 619
Fat: 49 438 71%
Sat: 22 199 32%
Poly: 9 85 14%
Mono: 12 110 18%
Carbs: 18 44 7%
Fiber: 7 0 0%
Protein: 34 136 22%

I've decided to use 1/2 this recipe for my breakfast tomorrow and see how hungry I am 2 hrs later. I think this will make a great breakkie for me!

Caveat: Doreen advises that microwaving flax seed or using boiling water will kill the good efa oils in flax seed. It's best to use hot 180F water instead.

Thanks Nellie for posting this recipe!
