I tried something quick and easy for supper tonight. It was a surprising success. My eleven-year-old asked if we could have it tomorrow for lunch! So I thought I'd share.
Nobody wanted to eat taco salad again so here's what we had instead. On a plate, spread out 1 cup of warm mashed, steamed cauliflower, sprinkle 4 ounces taco meat over top, and cover with grated cheese. Microwave until the cheese is melted. Yummy.
The cauliflower is 7 carbs, but you can subtract 3.2 for fibre.
The meat is less than 1 carb. Add in your cheese's count. That's it.
By the way, packaged taco meat mix is high in carbs. You can make your own easily and quickly:
Taco Meat
1 1/2 pounds lean ground beef
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon cumin powder
Fry ground beef until almost cooked. Stir in spices and continue cooking until the meat is browning.
4 ounces of this meat has 0.8 g. carbohydrates.
