Oh yes,
If you can find pork rinds, grind them up in a blender or food processor.
Then, mix about 3/4 cup of crushed pork rinds to about 3/4 cup freshly grated parmesan cheese, maybe some seasonings. Dip your porkchop in a beaten egg mixture, then into the crumbs. I fry this in Extra virgin olive oil, or butter would work too. They are fabulous.

Trust me you WILL NOT taste the pork rinds, they will taste like bread crumbs. But I will warn you to turn your stove's fan on, because cooked pork rinds don't smell very good.

Good luck
I crave this it is so good, it also works with Chicken.

Default kind of a homemade Shake'n'Bake

My version I've tried just recently (and works on boneless chicken thighs as well as pork chops!) is a half and half mix of ground almonds and ground pork rinds, and a goodly helping of a good chili powder.

Then of course coat the meats with the beaten egg and roll in the mixture. I bake 'em at 350F for about 20-30 minutes, depending on the thickness.
