From Monday to Friday cookbook
1 tablespoon olive oil
1/2 cup onions, chopped
1 skinless boneless chicken breast half, cubed
1/2 tablespoon minced garlic
2 tablespoons chopped fresh parsley
2 tablespoons dry white wine
1/8 teaspoon dried oregano
1/2 cup Italian-style canned diced tomatoes
salt
freshly ground black pepper
Heat the oil in a skillet or wok. Saute the onions until they are translucent. Add the chicken breast and saute the chicken for 3 to 4 minutes.
Add the remaining ingredients to the skillet and bring to a bubble and simmer uncovered until the sauce is reduced.
