Hi Rosebud and everybody else.
I get two little loaves made in a sandwich box about 4" by 4" about 2 and a half inches high.
OK, so it's no match for 'mother's pride' but it's not bad - and so flexible. I've tried the following variations:
Add about as much again desicated coconut to original mixture and some spenda. You need a touch of cream now as the mixture will be too dry. Spread into blobs and nuke for 2 - 3 mins. Result, coconut biscuits.
Take above mixture and add a large spoon of plan cocoa powder. Result, chocolate coconut biscuits!
I've tried replacing half the ground almonds with soya flour. It works but it's a bit yellow and crumbly - pure almonds is better. I've heard it also works with soya protein powder.
I've also tried toasting it (it works) and frying it (works, but doesn't really taste like fried bread).
Have fun experimenting everyone.
