You have to take it on blind faith that eggs and fat are OK to eat.

One of the most important things to do in the beginning is learn to count carbs. You can follow Atkins guidelines on the vegetable and salad rule, but it can be limiting. By counting carbs, you will find that there is a lot you can eat within a 20 gram limit because you subtract the fiber.

For dinner you could have...

6 oz. steak, 6 spears asparagus, 1/2 cup sliced mushrooms sauteed in butter

And for lunch...

Spinach salad with sliced cucumbers and radishes, broiled salmon filet (or canned salmon) creamy garlic dressing

Breakfast can be anything you want. Leftovers, eggs, bacon is all fair game.

peneb,

I have had similar thought about eggs. There are days when I've eaten six or seven eggs a day. There are then days when I can't even stand the thought of eating an egg. But if I'm in the mood for them, I eat them, without worry.

In Protein Power, there's actually a story of a guy who ate three dozen eggs a day and nothing else. I wouldn't recommend that, not becuase of the quantity of eggs, but because of the lack of variety. But as long as you are including the .6g per egg in your carb count, I wouldn't worry about how many you eat.
