Default I need some help balancing my fat/protien/carb ratio

I've been low carbing a while, and recently I removed all dairy from what I eat. This is because I am lactose intollerent, and I think I could have yeast overgrowth. Because of the possiblity of yeast overgrowth, at this time I'm not eating tomato's, fruit, nuts(possiblity of being moldy, and not helping get rid of the yeast), and fungus(Like mushrooms).

Since I have done this, I've been struggling to keep my fat/protien ratio in balance. I've been eating alot more whole meat (read unprocessed) instead of things like beef sticks, or leftover caseroles. There were several days, when my portien percentage was almost equal to my fat one. I'm not sure what I could be eating or not eating to help balance this out. I've posted on fitday for the past week or so what I've been eating. (There are no postings of Saturdays and Sundays, because I don't measure on those days to reduce the stres of the day.)

Another thing, since I am getting most of my carbs from veggies and eggs, I've noticed most days I don't make even 20 carbs. I've read here and in the Atkins book, that it's best to get to as close as 20 carb daily that you can. Again, you can look at my fitday to see my numbers and what I've been eating.

Suggestions/ advice would be great!

I dont see any salad dressing, you can add fat with salad dressings, some will up carbs one or two grams for the day also, how about mayonaise. Can you have mayo if you are lactose intollerant (sp) (dont mean to sound stupid, I dont know) I would try to up the fats that way if possible.

An idea would be to add back in a few higher carb veggies to make sure you are reaching your carb limit.

I looked at yesterdays pie chart and I think it looked ok, but I would try to up your fat in the form of salad dressing etc. You should be shooting for 65-70% fat and 25-30% protein.
