Menus become low-carb

Restaurants are adding low-carb meals to their menus for patrons who are on the Atkins-style diet. Here are a few dishes available at Valley restaurants:

• Elevι, 3118 E. Camelback Road, Phoenix, (602) 952-0733. Pork tenderloin, marinated and grilled with maple-glazed sweet potatoes, baby bok choy and a shallot and cranberry reduction ($24).

• Mezcal, 7122 E. Greenway Parkway, Scottsdale, (480) 556-0770. Poc Chuc de Pescado, grill-seared, lime-marinated salmon with roasted onions, tangy cabbage, habanero guacamole, sun-dried tomato salsa and black bean sauce ($18).

• Tokyo Express, eight Valley locations. Low-carb teriyaki bowl minus rice with chicken, broccoli, carrots and cabbage ($5).

• Majerle's Sports Grill, 24 N. Second St., Phoenix, (602) 253-9004. Tuna salad with sliced tomatoes on a bed of lettuce with fruit salad ($6).

• Kincaid's Steak, Chop and Fish House, 2 S. Third St., Phoenix, (602) 340-0000. Enjoy all of the restaurant's sandwiches with grilled portobello mushroom caps instead of bread or a bun for $1.50 extra.

• Chipotle, 11 Valley locations (www.chipotle.com). Burrito Bol is a burrito or fajita in a bowl, no tortilla. Substitute lettuce for rice to create a grilled chicken, pork or beef salad ($5.25 to $6).

It would be interesting to know what the actual carb counts were for these dishes. The "maple-glazed sweet potatoes" doesn't sound very low carb. Neither does the "black bean sauce".

Nor the 'roasted onions', carrots & fruit salad in various plates.

Post-induction, a SMALL, CONTROLLED amount of those offending foods (onions, sweet potatoes, fruit) are acceptable in certain cases - but as general low-carb staples, not.

If you are SURE you can taste and stop - and I mean REALLY SURE - fine - but don't forget, for most people, one taste can start a chain reaction of sabotage to this diet.

Sounds pretty darn yummy for a lower carb gourmet choice out now and again.
