I hear you on the expense - it's not really worth it. It's generally the sweeteners that are expensive, so you're best to alter the recipe so that it isn't all that sweet.
In general, the desserts made with sugar-free jell-o are the cheapest. I just mix in some cream and cream cheese while it's hot, and that's a nice treat.
Another (relative) cheapie is the peanut butter cup recipe. Unsweetened chocolate, cream, splenda, peanut butter; I think. It's over in the "sweet treats" recipe section of this website. I've always wanted to make little "haystacks" out of melted unsweetened chocolate, a little splenda and cream, and peanuts.
Another cheap one is the gummi worm recipe. It's just jell-o jigglers, basically. It's at the recipe section, too.
Unfortunately, sugar and flour are dirt cheap. Trying to replace them, *isn't*.
