Question cream alternative

i KNOW i read somewhere in someone's journal that they were using a nut milk as a cream alternative in coffee. now, i can't find it. i did a search, and came up empty. any one..... ???

LOL Brenda, preparing for the project?

You can use Almond Milk or Coconut Milk. I have used coconut milk and found it tasted pretty good. The section of the grocery store with the Thai foods usually has cans of it. I'm pretty sure BillT posted a recipe for making almond milk if you're interested in that.

I've posted about using both coconut milk and almond milk in my coffee. Neither one is real cream though, **sigh**

Homemade almond milk is the better tasting of the two, IMHO ... but I found both times that I made it ... it's not a good keeper. Don't make more than 2-day's worth, because it spoiled quickly, even using carefully scalded glass for storage

I also found that I needed to use a LOT more of either of these substitutes than cream. I find that 1½ teaspoons (7 ml) 18% cream is perfect in a 10 oz mugga. Whereas I needed a couple Tablespoons (30 ml) of the others.

Just my experience though, I'm an old cream-addict!!

Default Old Cream Addict!

Boy do I love cream, too! Tomorrow I start cutting dairy down to 2 oz a couple times a week. (trying to get out of a stall) I'd been planning on not having anymore coffee (decaf) I mean why bother if there's no cream? I forgot about nut milk, I do agree with you Doreen, I use more. I've only had it in tea before tho' (Chai). Anyways, I'm really freaked out about not having my morning cream and coffee tomorrow.
The only coconut milk I've found comes in a can and has sweeteners in it. Nat, your's doesn't have any added sugars? I'll have to look in an Asian import store or something on Friday when I go to Albuquerque if you found some without sweeteners.

yes, yes, yes, i am preparing, Nat!! but i just had a flash of insight. i am in the process of kicking my addictions, one at a time. this what not a path i chose consciously, but w/ the quitting smoking, it just snowballed.
so, i think COFFEE is my next one to kick. i am going to wait until i start the project, so will enjoy every last drop. Talk about cost savings!! i like the expensive stuff. i think this will also help in my eating habits and choosing healthy(er) fats and not the cream. just rambling. i am SO excited to do this project. bf thinks i'm nuts too, little does he know he's doing it with me. HA

doreen- thanks. what are you going to do about cream during the project?

LMAO! Poor guy, He'll be so healthy he wont know what hit him

Have you considered slowly weaning yourself off the caffiene? Using some decaf with regular and gradually increasing it so you don't have the headaches and w/drawal to deal with along with the project restrictions. Or are you looking forward to the pain ?

You're like me, only the best coffee beans, too!! I started buying the best tasting decaf I could find (just short of Blue Mountain--it's now $30 a pound here) and mixed the beans 1/2 and 1/2 then the next batch of beans I mixed 2/3 and 1/4, and then just the decaf. I keep the mixed beans in the freezer and grind fresh in the am. It took a month to wean off of regular and i never had a headache or any side effects whatever.
I think it's a psychological thing, too. It's that flavor first thing in the morning and the smell that kinda wakes me up and gets me moving...because it has no caffeine.
Now, I'm wondering what your BF will say when he finds out that he's been decaffeinated, too?!?

www.wildernessfamilynaturals.com has a coconut cream. I bought some but it is so overpoweringly rich you really do have to cut it somehow or just use it in cooking. (The baby loves it though, so maybe it's just me) It could be an interesting alternative. The problem though it it is almost a solid so you may have to heat it first to get it to disolve in coffee.

In my teas such as chai I love soy slender vanilla. It sweetenes it just slightly and is very low carb. In coffee though it has a tendancy to do some weird seperating thing that just looks nasty.
