Default Substitute low carb fruits and veggies

Hi, I need help with finding other fruits and veggies that are low on the glycemic index. My book tells me that Strawberries, blueberries, and Kiwi and grapefruit (I think0 are low. However, Kiwi is not in season and neither are strawberries. I have the frozen ones but I do not want frozen ones to put in cottage cheese. Are there any other fruits so, I do not get bored. Also veggies, I am not finding many veggies that are low. I am getting tired of mushrooms, asparagus, broccoli, and cauliflower. What am I to do?

Hi Donna. If you check this link (scroll to the bottom), there's a whole whack of low GI vegetables. (Btw, I'm not endorsing that product, it just happens to be the first lengthy GI list I came across.)

There's a fruit list there, too. Don't fall into the trap of thinking you must have sweet fruit - tomatoes, zucchini, eggplant, cucumbers, squash and peppers are all fruit and have similar nutrition profiles to sweet fruit, without the sugar.

Kristine,

Thanks for the link. It was exactly what I needed. I forgot the other fruits. I keep thinking of them as veggies and I know that they are not. I now have something else that is low glycemic to add.

When I started zoning, I had a lot of trouble getting enough carbs with low GI. Then I realized that I could add 1/2 cup of tomato sauce or salsa or 1/4 cup of kidney or black beans, or some barley. You can also supplement with up to 25% of your carbs from unfavorable sources, 1/2 slice of bread or rye cracker, etc.

I love salsa and avacado in my cottage cheese! I was really missing salsa (since I don't each chips!)until I tried it this way. I have jars of homemade salsa that everyone was enjoying but me. Now I hoard them for myself and make everyone else eat the store bought stuff!

Salsa is also good on steak!

Wow! Salsa and avocado in cottage cheese! Since I like cottage cheese, that sounds absolutley luscious! I am going to try it. Thanks!
